Cooking With CESI: Easy Fruit Pizza


I scream, you scream, we all scream for…..PIZZA. 🙂

As summer winds down, many people are enjoying athe last long weekend of the season with Labor Day cookouts and parties. Whether you are hosting a cookout, or attending a party, everybody tends to get excited about dessert. Why not serve a simple, elegant and inexpensive fruit pizza? This recipe comes from our friends at Pillsbury – I’ve seen many variations of this recipe and it’s always been a hit at any event I’ve taken it to.

The recipe serves 10-12 depending on the size of the slices, and I estimated the cost of ingredients at less than $15, so the cost per serving clocks in at $1.25-$1.50 per person. Not bad for a delicious and fun dessert.

Easy Fruit Pizza

Ingredients

1 roll (16.5 oz) Pillsbury™ refrigerated sugar cookies
1 package (8 oz) cream cheese, softened
1/3 cup sugar
1/2 teaspoon vanilla
2 kiwifruit, peeled, halved lengthwise and sliced (or substitute another fruit of your choice)
1 cup halved or quartered fresh strawberries (or substitute another fruit of your choice)
1 cup fresh or frozen blueberries (or substitute another fruit of your choice)
1/2 cup apple jelly

Steps

  1. Heat oven to 350°F. Spray 12-inch pizza pan with cooking spray. Press dough evenly in bottom of pan to form crust. Bake 16 to 20 minutes or until golden brown. Cool completely, about 30 minutes.
  2. In a small bowl, beat cream cheese, sugar, and vanilla with electric mixer on medium speed until fluffy. Spread mixture over cooled crust. Arrange fruit over cream cheese. Stir jelly until smooth; spoon or brush over fruit. Refrigerate until chilled, at least 1 hour. To serve, cut into wedges or squares. Cover and refrigerate any remaining pizza.
