Cooking with CESI: Autumn Roast Pork


September means it’s nearly time for cooler Autumn weather, and with that cooler weather comes a wide array of comfort food to fill our bellies. Nothing spells comfort and inspires a vision of cool crisp days quite like a simple but delicious pot roast. The beauty of a roast is that they can be prepared simply and quickly but make a delicious and filling meal. If the meat is purchased on sale, it can be an economical option. I tend to look for deals and purchase my meat when it goes on sale for less than $2 per lb so that I can feed my family of 6 a meal including sides for less than $2.50 per serving. Here’s my version of quick and delicious Autumn Roast Pork

Ingredients:

3-4 lb pork roast (whatever cut of meat is the cheapest is fine – no need to go high end)

2 apples peeled and quartered

2 onions peeled and quartered

1-2 lb of baby carrots

3/4 cup of apple juice or cider

3/4 cup of apple sauce

2-3 T brown sugar

Garlic Powder

Gravy Magic or liquid roast seasoning (optional)

Salt and Pepper

Directions:

Place roast in crock pot or covered dutch oven. Season roast with salt, pepper, garlic powder and brown sugar. Top with option liquid roast seasoning, apple sauce, and sliced apples. Add chopped onions and carrots around the roast and then add apple juice or cider to the pot. If using a crock pot, cook on low for 6-8 hours. If using a dutch oven, cook with cover at 350 degrees for 3-4 hours. Remove meat and vegetables and bring pan juices to a boil. Thicken pan juices with cornstarch and water or flour and water to make gravy. Serve with mashed potatoes or side item of your choice.
