Cooking with CESI: Thanksgiving Turkey Casserole

Leftovers are one of the most economical ways to create a meal for your family. And Thanksgiving leftovers, in my humble opinion, are the very best type of leftovers. If you have extras in your fridge from your Thanksgiving meal, this delicious casserole will be a treat that is easy on the budget and simple to throw together after a day of Black Friday shopping! We estimate the cost to prepare this casserole at roughly $1 per serving or possibly even less, depending on what you have on hand!

  1.  Lightly grease a 9×13 inch baking dish.
  2. Melt 4 T. butter in a saucepan over low heat then carefully wish in flour. Stir in evaporated milk and water. Season with salt and pepper. Stir over low heat until thick and bubbly.
  3.  Melt remaining butter in a separate saucepan over low heat,. Combine with dry stuffing mix. Place the turkey and vegatables in the prepared baking dish.  Pour the sauce over turkey, then sprinkle with Cheddar cheese. Spread mashed potatoes over cheese. Top mashed potatoes with the stuffing mixture.
  4. Bake 45 minutes in 350 degree oven.
