Summery Succotash Salad
Try saying Summery Succotash Salad 5 times fast 😉 This colorful dish is the epitome of summer and can be served as a salad or side for your next BBQ. It’s refreshing and tasty and the best part is, it’s super easy and budget-friendly. I estimated the cost of ingredients at roughly $10-$12 if you have none of these items already on hand, so it averages to $2 or less per serving.
Tomatoes and corn are seasonally sweet and usually on sale this time of year. You can also use your grocery’s brand frozen corn along with the frozen lima beans and easily save extras for later. I used my local grocery’s reduced fat feta cheese and it tasted great. This money-saving recipe is also great to feed a larger group – enjoy!
2 Tablespoons of Extra Virgin Olive Oil or Butter
1 Clove of Minced Garlic
1 Large Chopped Sweet Onion
2 ½ cups Corn Kernels (From 5 Ears of Corn or Frozen Corn)
1 ½ cups Frozen Lima Beans
1 Pint Cherry Tomatoes, Halved
1 Lemon, Juiced
½ Cup of Feta Cheese
¼ Cup of Basil, Thinly Sliced
Salt and Pepper to Taste
Heat oil or butter in a large saucepan over medium heat. Add onion and sprinkle with salt. Sauté until soft and translucent, about 5 minutes. Then add garlic and stir until fragrant, about 1 minute. Reduce the heat to low then add corn and lima beans. Cover and cook until just tender, stirring occasionally. It should be ready in about 10 minutes.
Transfer to a large bowl and then toss with tomatoes, lemon juice, feta, basil, and salt and pepper to taste. Approximately 6 servings.
